BUTTER CHICKEN PASTA

Ingredients

Chicken breasts 2 cut into medium cubes
Oil ¼ cup
Butter 1 tbsp
Ginger garlic paste 1 tbsp
Salt ½ tsp
Roasted and crushed cumin 1 tsp
Coriander crushed 1 tsp
Orange red color a pinch
Makhani masala 2 tbsp
Dried fenugreek leaves 1 tsp

METHOD FOR CHICKEN
Marinate chicken with all above, keep aside for 1 hour.

Ingredients for Pasta

Farfalle pasta 2 cups boiled
Salt ½ tsp
Oil 2 tbsp

METHOD

In a pot boil water with salt, oil, add pasta, cook until done about 5-7 mins.


Ingredients for Sauce

Onion 1 medium diced
Oil 2 tbsp
Butter 2 tbsp
Garlic paste 1 tsp heaped
Salt 1 tsp
Paprika 1 tsp
Sugar 1 tbsp
Ground cumin 1 tsp
Tomato puree 3 tbsp
Fresh cream ½ cup
Water 1 ½ cup (In which we boiled pasta)
Parmesan cheese for topping
Crushed red pepper for topping
Grated cheddar or mozzarella cheese ½ cup

METHOD

Heat ¼ cup oil in a wok, fry the marinated chicken, remove and keep aside. In the same wok, add diced onion, fry till transparent, add garlic paste, tomato puree and all the spices, add boiled pasta, toss well, then add cream, reserved water from the boiled pasta, add 2 ounce butter and a handful of grated cheddar or mozzarella cheese, garnish with parmesan cheese and crushed red pepper.

CRISPY POTATO NOODLE CUTLETS

Ingredients

Potatoes boiled and mashed 2 cups
Egg noodles 1 cup
Chicken breast (boiled and shredded) 1 cup
Salt 1 tsp
Black pepper 1 tsp
Crushed red pepper 1 tsp
Roasted and crushed cumin 1 tsp
Paprika 1 tsp
Ginger garlic powder 1 tsp each
Chopped coriander leaves 2 tbsp
Green chilies 6 finely chopped
Rice flour ½ cup
Eggs 2 beaten
Corn flakes crushed into crumbs 1 cup heaped
Bread crumbs 1 cup

METHOD

In a bowl add mashed potatoes, noodles, chicken and all the ingredients together, mix well until well combined, add chopped green chilies, coriander. In the end, add rice flour and mix well, make cutlets in the round shape, coat with eggs, corn flakes and bread crumbs mixture, deep fry until golden and serve with ketchup.

YOKO SIZZLING CHICKEN

Ingredients

Chicken breast ½ kg
Salt 1 tsp
Crushed red pepper 1 tsp
Garlic paste 1 tbsp
Crushed black pepper 1 tsp + ½ tsp
Meat tenderizer ½ tsp
Oil ¼ cup
Butter 2 tbsp
Crushed garlic 1 tbsp
Red Thai chilies 4 chopped
Mushrooms sliced ½ cup
Brown sauce 1 cup
Worcester sauce 2 tbsp
Soy sauce 2 tbsp
Carrot 1 cut into fingers and boiled
Green beans few boiled
Sweet corn ½ cup
Boiled rice 1 cup to serve
Fried egg to serve
Fries to serve

METHOD

Marinate chicken fillet with salt, crushed pepper, garlic, black pepper, meat tenderizer and leave it for 30 mins, fry in oil, cook till chicken tender. Heat butter in another pan, add crushed garlic, chopped red chilies, add brown sauce, mushrooms, soy sauce, Worcester sauce, salt and black pepper, pour the sauce over the chicken, heat sizzler, serve chicken fillet with sauce on the sizzler, serve with rice, boiled veggies, fried egg on top and fries.
